The preparation for the Spiced Lamb-Stuffed Aubergines with Aleppo Chilli Butter begins with slicing five medium aubergines lengthwise and scoring the flesh. After salting the aubergine halves and letting them sit for 20 minutes, they are patted dry, drizzled with olive oil, and roasted until softened. Meanwhile, the lamb filling is crafted by browning lamb mince with seasoned salt and pepper, followed by cooking finely chopped onions, garlic, and diced green pepper with an aromatic blend of ground cumin, cinnamon, and Aleppo chilli. This mixture is then combined with cherry tomatoes and Turkish red pepper paste to enrich the flavors before being spread over the roasted aubergines.

A final touch of Aleppo chilli butter, prepared by melting unsalted butter with a pinch of salt and the remaining chilli, is poured over the aubergines. A garnish of parsley and a dollop of Greek yogurt provides a fresh finish, with suggestions to serve alongside warm bulgur, rice, or flatbreads and a simple parsley-and-onion salad.

The Berry-Ripple Tahini Ice Cream serves as a refreshing conclusion to the meal. Mixed berries are cooked down with honey to release their juices, then cooled. Meanwhile, a creamy base is prepared by blending tahini with vanilla essence, condensed milk, and Greek yogurt, which is then folded into whipped double cream. This mixture is layered with the berry sauce to create a ripple effect, then frozen for at least four hours or overnight. When ready to serve, the ice cream is softened slightly and can be enjoyed with biscuits and optional toasted sesame seeds for added texture.
