The first option, a Classic Grilled Chicken Caesar Salad, starts with 120 grams of washed and torn romaine lettuce. This salad includes 100 grams of grilled chicken breast, 30 grams of Caesar dressing, 25 grams of garlic croutons, and 20 grams of shaved Parmesan cheese. To prepare the dressing, blend together an egg yolk, a teaspoon of Dijon mustard, a garlic clove, two anchovy fillets, a teaspoon of Worcestershire sauce, a tablespoon of fresh lemon juice, and two tablespoons of grated Parmesan cheese. Add three tablespoons of extra virgin olive oil, and season with salt and black pepper to taste. Season the chicken with a teaspoon of olive oil, salt, and black pepper before grilling or pan-searing until fully cooked. After letting the chicken rest, slice it to top the salad. The dressing is made by mixing three tablespoons of mayonnaise with a teaspoon of Dijon mustard, a teaspoon of Worcestershire sauce, a tablespoon of lemon juice, a minced garlic clove, and two tablespoons of grated Parmesan cheese.
